Job description
1. Ensure high standard, freshness, proper portion control quality and consistency of all kitchens. Supervise directly all separate food outlets and the main kitchen during special functions. Station in front of cooking ranges during meals. Cook if requested by the business.

2. See that outlets are in operation during hours prescribed.

3. Be thoroughly familiar with daily and weekly special menus.

4. Make suggestions to Executive Chef wherever possible on:
  • Menu content
  • Food preparation and improvement.
5. Organizing weekly staff schedules and daily store requisition (report to the Executive Chef).

6. Be sure all pertinent information is passed on to subordinates.

7. Responsible for the training and motivation of all personnel according to established standards on a daily basis to ensure high quality and standards.

8. See that all subordinate staff are in proper, neat and clean uniform and see that they arrive to work on time.

9. Responsible for maintenance and cleanliness of all outlets (equipment, counters, coolers, utensils and storage areas) Coordinate with the Steward in charge.

10. Be thoroughly familiar with hotel rules, regulations, policy and procedures and emergency procedures.

11. See that the house rules are followed and enforced by proper disciplinary action.

12. Planning menus: staff daily meals, provide twice a day breakfast, lunch or dinner. Controlling, ordering food according to staff attendance.

13. He is responsible for correct written inter-transfer, recipe cards and requisitions.

14. Checking on deliveries of all food items to the kitchen and receiving.

15. Ensure proper storage of all items.

16. Responsible for exact “mise en place” in all kitchens.

17. Performs any task deemed necessary by the Management for the efficient running of the kitchen operations of The E&O Hotel in general.
